HOMMITY PIE
1kg potatoes
50g butter
200ml sour cream
35ml sunflower oil
1 clove of garlic crushed
100g petit pois
100g diced onion
75g cheddar cheese
Salt and pepper to taste.

Peel potatoes and place in cold salted water. Bring water to the boil and cook for 30 minutes or until soft. Drain and add butter, cream, oil garlic and seasoning. Leave to steam together for a couple of minutes and then mash thoroughly with a potato masher.

Meanwhile bring a separate pan of salt water to the boil and add the petit pois. Blanch for 3-4 minutes and drain. Add together with the onion to the potato mixture, mix well and transfer to a buttered ovenproof dish.

Line with short bread pastry, add mixture and cover with cheddar cheese.
Bake for 25 minutes at Cook at 190ºC.

TANGY LEMON SURPRISE (2-4 people)
100g caster sugar
50g butter
50g self-raising flour
2 eggs separated
2 grated lemons, rind and juice.

Whisk the butter and sugar until pale and fluffy. Mix in finely grated lemon, add the egg yolk and flour, and mix well. Stir in milk and the juice of two lemons. Whisk the egg whites until stiff and fold into mixture. Pour into a buttered dish and stand in a tin of water.

Stand the tin in a roasting oven on the griddle shelf resting on the floor of the oven. Cook for about 30-40 minutes until the top is set and spongy.
